As some of you know, I had a heart attack in June of 2004. Since then I have made a pretty radical lifestyle change. I basically follow what is called Mediterranean Lifestyle.
Once you understand the basic theory and technique (because essentially thats all it is, theory and technique) there really isn’t any cuisine that can’t be adapted. I actually enjoy what I eat now much more than what I used to eat… which was typically very traditional Southern fare. Lots of fried food, Beef, butter, cream, … you know, all things they say lead to Heart Attacks!
